Hi I'm Leonie from accounts and I'd like to share one of my healthy experiments.
I'm trying to cook free of preservative/artificial colouring/artificial flavouring/wheat and low GI.
Why you might ask? Well I have too many aches and pains and I want to eat low inflammatory foods and still have yummy food to eat.
The almond cake has passed the test around the office.
I change the fruit in it depending on what I have in the fridge or what is in season.


Ingredients

100g organic butter (or coconut oil)

1/3 cup xylitol (or sugar)

3 large eggs

200g almond meal

1/3 cup gluten free Self Raising Flour  (or 1/3 cup buckwheat flour with 1 heaped teaspoon of baking powder)

1 teaspoon vanilla extract

2 large apples peeled and chopped (plus cinnamon and ginger powder to taste)

OR  2 cups of berries (eg raspberries, blueberries)

2 tablespoons flaked almonds (optional)


Method
Preheat oven to 180degreesC.  

Grease a 24cm pie/tart dish (I use a Pyrex one) 

Beat softened butter, xylitol and eggs and vanilla. 

Add in flour and almond meal and gently beat. 

Add fruit and gently mix with a knife. 

Spoon in to tart dish. Even out with a knife. 

Sprinkle over flaked almonds. Bake for 30-35 minutes. 

Test with a toothpick at 30mins. If it comes out clean it is ready.
