Healthy Chocolate Biscuits

You won’t feel guilty eating these biscuits, they are packed full of goodness.

This recipe has been inspired by “The Healthy Chef-Teresa Cutter”

If you are on an anti Candida diet, these are safe for you to eat.

I use Xylitiol (from birch trees) instead of sugar.

 

Ingredients

1 ½ cups almond meal

2 tablespoons of chia seeds soaked in ½ cup of water for 15 minutes

1 cup organic desiccated coconut

¼ cup macadamia nut oil

¼ cup xylitol

Few grinds of Himalayan rock salt

1 teaspoon of vanilla powder or extract

3 tablespoons organic raw cacao

30g dark chocolate chopped small (I use Plamil brand chocolate that is available dairy free and is sweetened with xylitol)

2 heaped tablespoons of cacao nibs (these give flavour and a nice crunch in the biscuit)

 

Method

Preheat oven to 140 C (fan forced)

Mix all the ingredients.

Scoop approx. 1 slightly heaped tablespoon of mixture.

Cup with your hand (this will help to mould into shape) as you slide the mixture on to the tray.

Bake on trays lined with baking paper for 30 minutes.
